The Best of Bread
Price: $18.98 USD
If they are to believed, David Gates and the other members of Bread never intended to become the enduring icons of a subgenre they virtually invented: soft rock. Indeed, scattered throughout this expanded edition of a perennial bestselling catalog album are tuneful evidence of their original intent, as one band mate said, "to make the '60s last a little longer." But it's the familiar, largely Gates-penned and -sung hit singles that remain the band's legacy, from "Make It with You" through the reunited band's last hurrah, "Lost Without Your Love." Though they've become oft-mocked clichés, these are singles informed with a rare, often complex melodic sense, delivered with a deceptively breezy tone by one of pop's purest tenors. Gates and Bread clearly colored artists as diverse as '80s MOR icon Christopher Cross and nouveau singer-songwriter David Mead. --Jerry McCulley

Non-stick heavy duty pan Temperature safety fuse 10 minute power interruption protection maintains operation for up to 10 minutes in case of possible power failure Color - WHITE
Providing myriad options, this automatic bread maker embodies the marvels of 21st century electronic convenience and choice. Yes, it mixes, kneads, rises, and bakes bread in three loaf sizes up to 2-1/2 pounds. But its digital controls go much further, offering settings for white, whole wheat, multigrain, and French (crisp crust, open texture) breads, each made according to what's best for that particular style. Other settings permit rapid baking and baking sandwich bread with a soft crust. For raisin (or other dried-fruit) bread, a beeper signals when to add the fruit so it's not crushed during kneading. Crust color--dark or light--can be selected as well.

The machine automatically adds yeast at the proper time from a dispenser on the unit's lid. It also bakes non-yeast, quick breads-- like banana and gingerbread--and sweet cakes. And it mixes, kneads, and rises doughs for pizza, focaccia, croissants, and other pastries without baking them. A timer permits the machine to be programmed up to 13 hours in advance so fresh bread or cake is available for breakfast or dinner. For cleanup convenience, the baking pan is nonstick. Clad in metal and packing 550 watts of power, the machine measures 14 inches wide, 13.5 inches high, and 9 inches deep. Its instruction booklet is exceptionally easy to understand and includes recipes for 40 breads and doughs along with an insightful guide to baking basics and illustrated tips for making pastries. --Fred Brack

Anthology
Price: $11.98 USD
Those who had more than their fill of the likes of England Dan & John Ford Coley in the '70s had Bread to thank for the proliferation of such acts. Bread, led by David Gates, took all of the softer aspects of the post-'60s folk metamorphosis and none of the artistry. Songs like "Make It with You" and "Baby I'm A-Want You" were enormous hits, but nothing compared to the success of "If." Surveys would probably show that eight out of 10 weddings in the years after the song's debut had it squeezed somewhere in the ceremonial proceedings. Anthology doesn't really offer anything that some select surfing of adult easy listening stations doesn't already provide. It also shows that in the end, most of Bread's material, while a staple of the aural diet of many, ultimately has become stale as their namesake. --Steve Gdula

The Bread Baker's Apprentice: Mastering the Art of Extraordinary Bread
Price: $35.00 USD
Co-founder of the legendary Brother Juniper’s Bakery in Sonoma, California, author of the landmark books Brother Juniper’s Bread Book and Crust & Crumb, and distinguished instructor at the world’s largest culinary school, Peter Reinhart has been a leader in America’s artisanal bread movement for over fifteen years. Never one to be content with yesterday’s baking triumph, however, Peter continues to refine his recipes and techniques in his never-ending quest for perfect bread. In THE BREAD BAKER’S APPRENTICE, Peter shares his latest bread breakthroughs, arising from his recent pilgrimage to study in several of France’s famed boulangeries and the always-enlightening time spent in the culinary academy kitchen with his students. First you’ll peer over Peter’s shoulder as he learns from Paris’s most esteemed bakers, people like the brothers Poilâne and Phillippe Gosselin, whose pain ancienne has revolutionized the art of baguette making. Peter then walks readers through the twelve steps of building great bread, his clear instructions accompanied by over 100 step-by-step photographs. Then it’s on to over 50 new master formulas for such classic breads as rustic, chewy ciabatta, hearty pain de campagna, old-school New York bagels, and the book’s Holy Grail—Peter’s version of the famed pain ancienne. En route, Peter distills hard science, advanced techniques, and food history down into a remarkably accessible and engaging resource that is as rich and multitextured as the loaves you’ll turn out. This is original food writing at it most captivating, teaching at its most inspired and inspiring—and the rewards are some of the best breads under the sun.
"A bread baker, like any true artisan or craftsman, must have the power to control outcomes," says Peter Reinhart, author of The Bread Baker's Apprentice. "Mastery comes with practice." As in many arts, you must know and understand the rules before you can break them. Reinhart encourages you to learn the science of bread making, but to never forget that vision and experimentation, not formulas, make transcendent loaves. The Bread Baker's Apprentice is broken into three sections. The first is an amusing tale of Reinhart's visit to France and his discovery of pain à l'ancienne, a cold-fermented baguette. The second section comprises a tutorial of bread-making basics and Reinhart's "Twelve Stages of Bread." And finally, the recipes: Ciabatta, Pane Siciliano, Potato Rosemary Bread, New York Deli Rye, Kaiser Rolls, and Brioche, to name a few. All recipes include bread profiles and ingredient percentages. Reimagined for modern bakers, these mouthwatering classic recipes are bound to inspire. --Dana Van Nest

From the Manufacturer

What Makes the Home Bakery Supreme Special?

Bread made in Zojirushi’s Home Bakery Supreme appeals to all your senses. The horizontal shape makes it look like an oven-baked loaf, and the crust control function allows you to select light, medium, or dark crust. The two kneading blades knead the ingredients more thoroughly to make it taste better, and waking up to the smell of freshly baked bread has never been easier with the timer function. You can also prepare the dough in the Home Bakery Supreme and shape it yourself to bake in the oven.

The loaf of bread you bake at home should look like a regular loaf of bread. Unlike other bread makers that produce vertical loaves, Zojirushi’s Home Bakery Supreme bakes a large traditional-shaped 2-pound loaf, so the bread comes out the way it should, horizontally, and doesn’t have to be sliced on its side. The Home Bakery Supreme makes it easy to prepare and enjoy the delicious taste of freshly baked all-natural breads in the convenience of your own home. Never again will you need to wonder if that store-bought loaf contains preservatives or additives.

For Beginners and Experts

Not only is the Home Bakery Supreme an excellent breadmaker for beginning bakers, it’s also a useful tool for expert bakers. Because it controls the temperature while the dough is rising, it takes the guesswork out of the leavening process. Additionally, the two kneading blades and the enclosed temperature-controlled environment knead the yeast dough better than any other method. Whether you’re baking in the scorching sun or during a blizzard, the Home Bakery Supreme will give you consistent results.

All the bread cycles on the Home Bakery Supreme automatically preheat the ingredients to bring them to room temperature. However, if you find it unnecessary, you have the "Preheat Off" option to save time and immediately begin the kneading process.

Two Are Better than One

The Home Bakery Supreme features two kneading blades instead of one to make sure all ingredients are thoroughly kneaded. Additionally, the two blades knead yeast dough better than any other method. Not only does thorough kneading make the bread taste better, but it also prevents unsightly flour on the side of the bread.

Retrospective [2 CD SET]
Price: $24.96 USD
Sometimes soapy ("If"), sometimes heartbreakingly honest ("Everything I Own"), always melodic, early-'70s AM staple Bread are given their 50-cut due on the two CDs of Retrospective. A link between '60s studio pop and the post-Beatles singer/songwriter ethos, the outfit was at its best on songs by David Gates, who came on in a deceptively laidback manner. The set also includes solo work by Gates (including the Goodbye Girl theme) and James Griffin. --Rickey Wright
